These amazing cookies are gooey, chocolately and incredibly moreish. Oh, and flourless, dairy and gluten free!
After discovering this recipe I made three batches in three days! The boy and girl kept asking for more.
You won’t believe these cookies have no flour in them.
And if you use dark chocolate chips you can keep them dairy free too.
It’s such a simple recipe:
1 cup / 250g smooth peanut butter
¾ cup / 120g soft brown sugar
1 large egg
½ teaspoon bicarbonate of soda
¼ teaspoon salt
1 cup / 100g plain chocolate chips
Preheat the oven to 180C.
Mix the peanut butter, sugar, egg, bicarbonate of soda and salt together.
Add the chocolate chips.
Divide into 15 balls and place on baking parchment on a baking tray.
Bake for 10 – 12 minutes.
Cool on tray for 5 minutes then transfer to a cooling rack.
Try hard not to eat them all in one go!
