Super Vegetable Soup

Get the kids chopping and warm up with some veggie soup.

We have a soup night almost every week during the autumn and winter months.

It’s so quick and easy and a great way to get some super veg into the whole family.

When the kids were little I never told them what was in the soup, they just called it Orange soup (carrots and sweet potato). Now they’re older they love to help chop everything up.

We blend the soup and serve with grated cheese on the top and homemade bread or toast on the side. Yum.

We vary the vegetables we use each time but these are our favourites.

Ingredients our soup can’t do without:

Onion
Leek
Celery
Carrots
Sweet potato

Optional ingredients:

Butternut squash
Parsnips
Corn
Courgettes
Broccoli
Potato
Turnip
Swede
Lentils
Bulgar wheat
Soup pasta

Chop everything up, put in a big saucepan.
Crumble over a stock cube.
Top up with water not quite to the top of the vegetables.
Bring to the boil then simmer for 20 – 30 minutes.

Leave chunky or blend till smooth.
